The Stemberger family farms 8 hectares of vineyards planted to local grapes sorts within the Slovenian/Italian appellation of the Kras. Zelen was harvested early October. It comes from two plots, one planted in 1996 the other 2009.
Soils are mixed flysch and the region's famous terra rossa. Three days of fermentation/maceration in large used barrels with 70% of the skins preceded by 11 months with 30% unpressed fruit. Bottled unfined and unfiltered.
Zelen is at once light and deep. Whimsically perfumed but mineralic and textured. Kras wines are customarily enjoyed with the regions cured ham which the Stembergers also excel at producing. In the US, this style of skin-contact white wine is commonly referred to as "orange wine".
